    Alce Nero Organic Balsamic Vinegar of Modena comes from the Italian region of Modena – the traditional home of balsamic vinegars. Made from Trebbiano and Lambrusco grapes certified as organic, it is aged in oak barrels, which gives it a deep aroma and a characteristic sweet-and-sour flavour.

    The flavour profile is multi-dimensional: the initial sweetness of the grape must gives way to a distinct yet mild acidity, with a fruity, woody note from the oak barrel. Versatile in the kitchen – from classic Italian salads to reductions for drizzling over cheese and vanilla ice cream.

    Usage

    Vinegar for hot and cold dishes: salads (caprese, rocket with Parmesan), marinades for vegetables and meats, vinaigrette dressings, reductions for drizzling over meats, cheeses and ice cream. It also works well in desserts – drizzled over strawberries or wild berries. Vegan.

    How to use

    Drizzle over a tomato salad with mozzarella and basil, or rocket with Parmesan. Mix with extra virgin olive oil in a 1:3 ratio to make a dressing. For a reduction: boil 100 ml of vinegar with 1 tablespoon of sugar for 5–7 minutes, until it reaches a syrupy consistency. Perfect for drizzling over baked goat’s cheese or vanilla ice cream with strawberries.

    Storage

    Store at room temperature, away from direct sunlight. Close tightly after opening.
